Valentine’s Day is the perfect time to indulge in a little sweetness—both in your kitchen and your makeup bag!
From delectable paleo almond flour cupcakes to pink and red makeup looks inspired by love, let’s celebrate with style and flavor.
Valentine’s Day themed sprinkles are what originally inspired this post, and what better to go with adorable red, pink, and white sprinkles than some cupcakes (of course!) and some of our all time favorite pinks and reds from our Simple Beauty Minerals lip and eye collection.
We present to you our favorites for Valentine’s Day and my own personal very favorite recipe for naturally colored strawberry sweet pink frosting and tiny (yet totally indulgent) yellow cake cupcakes.
Paleo Almond Flour Cupcakes Recipe
For a sweet treat that’s Valentine-worthy and guilt-free, try these light and naturally gluten-free almond flour cupcakes. Perfectly simple, beautifully delicious!
Ingredients:
For the cupcakes:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 3 large eggs
- 1/3 cup pure maple syrup or raw honey
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened almond milk
For the frosting:
- 1/2 cup coconut cream (chilled)
- 2 tablespoons maple syrup or honey
- 1/2 teaspoon vanilla extract
- Optional: Fresh strawberries or shredded coconut for garnish
Instructions:
- Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.Bonus if their pink and red.
- Mix dry ingredients: In a large bowl, combine almond flour, coconut flour, baking soda, and sea salt.
- Blend wet ingredients: In another bowl, whisk eggs, maple syrup, coconut oil, vanilla extract, and almond milk.
- Combine wet and dry: Pour the wet mixture into the dry ingredients and stir until just combined.
- Bake: Fill liners 3/4 full and bake for 18-22 minutes. Cool before frosting.
- Make frosting: Whip chilled coconut cream with maple syrup and vanilla extract until fluffy. Adjust sweetness as needed.
- Decorate: Frost cooled cupcakes and garnish with strawberries or coconut.
Pair these cupcakes with a cup of herbal tea or serve them alongside a Valentine's dinner spread for a simple, yet indulgent, finish. ❤️
